#2622 Docs: fix config migrate output and second-instance setup in enable-managed-config

- Section 2 shows the re-run JSON as migrated false with reason already migrated. The command has never produced that shape. After swamp-club#2458 (PR swamp-club/swamp#2677) it prints alreadyMigrated true plus managedConfigSet (true when it just set the flag in this repo's .swamp.yaml, false otherwise).
- Section 3 tells operators to copy managedConfig: true into each other instance's .swamp.yaml by hand. After #2458, running swamp datastore config migrate on the other instance also works: it skips the copy and sets the flag. Mention both options, and note that the instance's local models, workflows and vaults stop being read once the flag is set.
- The reference page datastore-configuration.md (Managed Config section) may need the same JSON correction.

Fixed in https://github.com/swamp-club/swamp-club/pull/1259. enable-managed-config.md now shows the real re-run output {"alreadyMigrated": true, "managedConfigSet": false} and gives both ways to set up another instance: run config migrate on it, or copy the flag by hand. It also warns that local models, workflows and vaults stop being read once the flag is set. datastore-configuration.md had the same wrong re-run JSON and a made-up first-run JSON; both are replaced with real output and a field table.
