#2679 Docs: edit commands over --server take piped YAML on stdin

After swamp-club#2426, swamp vault edit, swamp model edit and swamp workflow edit accept the new YAML on stdin (vault edit gains this locally too). With --server, stdin is the only edit mode: the server never opens an editor, and the CLI fails with a clear error when nothing is piped. The manual page content/manual/reference/vaults.md (swamp vault edit section) describes vault edit as editor-only while listing --server; update it, and the model and workflow edit reference entries if they list --server. Also note that renaming a vault through edit breaks references to it by name, and that under managedConfig vault edit works on the datastore config tier.

Docs fix in swamp-club PR 1265 (one PR covering #2626, #2653, #2661, #2679, #2692, #2694, #2701, #2728, #2733, #2740).

Documented in swamp-club PR 1265. vault edit, model edit and workflow edit now describe replacing the YAML via stdin, and state that with --server stdin is the only mode, quoting the error shown when nothing is piped. vault edit also covers: --server needs the vault name; id, createdAt and type are pinned on a stdin update; the managedConfig datastore config tier; and a rename breaking references by name. Also removed the model edit line claiming the definition is validated after the editor exits.
