#3855 stagecraft: rename work mode `method` to `behavior`, matching swamp's rename of models to behaviors

swamp now calls models "behaviors" (swamp behavior run; swamp model still works). stagecraft's fourth work mode is still method (work.mode: method with a method: { modelIdOrName, methodName } block), which runs one method of a swamp behavior. The name reads as a generic term and hides that it is the swamp-behavior counterpart of workflow mode.
Proposal: rename the mode to behavior (and its call block / modelIdOrName field to match), upgrading older definitions on read via the existing schemaVersion upgrade chain, and update the studio legend (ƒ method), docs (README, REFERENCE, DESIGN, skill driving.md) and examples.
Where it lives: stagecraft/extensions/models/_lib/engine/definition_schema.ts (WORK_MODES, MethodCallSchema), dispatch.ts, studio.
Context: came up while preparing a live stagecraft walkthrough; slides had to explain "method" as "a swamp behavior's method".
