feat(clickhouse): tracked archive→CH backfill tooling (backfill.sql)

Follow-up to #859. The documented DR path ('replay from the events-archive-swamp-club lake') is referenced in manifest comments but no backfill.sql / tracked archive→ClickHouse rebuild tooling exists in the repo. The @keeb/clickhouse-loader (lake-loader, swamp-crm) already does archive→CH loads with dedup; formalize/track a prod-CH rebuild-from-archive path so DR is executable, not just documented.
